Bukidnon is not only the Pineapple capital of the Philippines but it is also home to several Lumad groups like Bukidnon, Higaonon, Manobo Groups, and Talaandig. Mindanao being blessed with rich natural resources, it is no surprise that most crops are grown there. It is the largest producer of bananas, pineapples, cacao, and durian.
Although I was not able to go to Bukidnon whilst on my southern sojourn, friends and family shared wonderful stories about the place and its culinary fare. Bukidonon is pretty much known for their pineapple creations! I like pineapples but it’s not a fruit that I usually would look for. However, there are several pineapple-based sweet treats that I crave every now and then. One is the Taiwanese Pineapple Tart. And a pineapple bread twist that I enjoyed when I was residing in Pangasinan. I forgot its name, and the bakery where I usually get it is either in Dagupan or Calasiao (I’m not so sure anymore). At least the Taiwanese Pineapple Tarts would be easy to procure, I can’t say the same for the latter as I don’t even remember its name and the bakery’s name. Hah.
With the recent pandemic and its aftermath, I became keener than ever about the food I consume. So whenever a pineapple craving (or any craving for that matter) hits, I put on my apron and head on to the kitchen!
Today’s recipe share is a #vegan pineapple pie that I made on a rainy day! This Princess Pie Singles can actually feed two people. I for one enjoyed 4 servings of this one mini pie. Enjoy this with Kisig’s Simple Chai Masala either hot or cold, depending on the weather.
