
Love is in the air once again. I remember, this time last year, the kitchen’s main ingredient was banana with the theme: “Basta may saging, labing!” The banana pops were a hit.

There is just something about Valentine’s that screams sweets and desserts. Although the kitchen started churning out edible artwork, aka sweets and desserts, with all the changes in diet and circumstances, only select sweets and desserts are being created. Of course, sugar is needed by the brain, albeit, in moderation. So, as much as possible, I sparingly use sugar and if I do, I usually go for muscovado or coconut sugar. Hence, if I want something sweet, I go for ingredients that are already naturally sweet so that little to no sugar is needed to satisfy my sweet tooth!

This sweet treat I tasted in Malaysia, which I’ve recreated under Atomic Treats, inspired this recipe. But instead of using sweet potato as the main ingredient, I decided to go for Kabocha squash. And to tickle the creative child in me, I decided to make it gluten-free too!
Since it’s the season of LOVE, indulge the romantic in you by piping hearts instead of rings. You can even spell out your special someone’s name if you’re up to it! I enjoyed these rings as is because I was already satisfied with the sweetness after frying. However, you can dress these little babies up with some sugar mixes like cinnamon, choco-cinnamon, and/or coffee-cinnamon. Why cinnamon? Because it goes really well with squash.
Another way to dress this up is similar to how the sweet potato version is usually coated: cooked in sugar. In a pan, melt granulated sugar in water (1:2 ratio). Then toss in the rings and coat evenly. Place on a drying rack and let it cool. You get to enjoy the crunch of the crystalized (cooled) sugar coating and the slight chewiness of the mochi.
