
Congee aka Watered-down rice. At least this is how I usually refer to this comfort food.
The good thing about congee is that you can make it as simple as can be or dress it up to the nines. All you need is glutinous rice, liquid, aromatics and spices. From here, you can easily use any protein and other ingredients that tickle your fancy.
And the best part? It’s one of the easiest one-pot cooking dish you can easily whip up when you’re too busy (or lazy) to go all out in the kitchen.
Lately, I’ve been craving the subtle tang and mint of lemongrass. Yes, I find this ingredient a little minty. So I went out of my way to get some. I made several dishes with lemongrass and I still have a few dishes on my list that I’m yet to create. As mentioned, I’m on a sojourn now and the current kitchen is not as equipped. With #mindfuleating in mind, even if it’s just a pack of instant noodles, me being a certified noodlic, I do what I can to load it up with fresh greens and other veggies. Yes, I enjoy vegifying most, if not all, processed food, especially instant noodles.

Currently, whenever I find myself preparing instant noodles, I add the following depending on my mood:
- Aromatics - minced garlic, julienned ginger, Amrey’s Kitchen™ Ginger-Garlic Paste, lemongrass, leeks
- Mushrooms - shiitake or enoki
- Tofu
- Eggs
- Veggies - carrots, peas, capsicum, and greens like cabbage (green, native, or napa), moringa, spinach, et al.

Going back to today’s recipe share, since I still have some lemongrass stalks in stock, why not make congee with it, yeah? I do love noodles but I am not much of a fan of instant noodles. Hah. So yeah, rice it is.
