Katutubo Thursday: Sagada-Style Egg Sandwich and Herbed Fries | Amrey’s Kitchen™

Whenever an egg sandwich is mentioned, I always imagine it to be mashed or roughly chopped hard-boiled eggs with mayonnaise, seasoned with salt and pepper (sometimes condensed milk is added) sandwiched between two slices of bread. At least until I was served with a well-done sunny side up, a slice of cheddar cheese block, two slices of heirloom tomato discs (or was it just a slice?), sandwiched between two slices of toasted white bread. Oh, and some fries on the side since I ordered an Egg Sandwich Meal. Backpacking can really broaden one’s horizon. Especially in the culinary world!

I was already intrigued by the addition of condensed milk to the usual egg sandwich filling I grew up enjoying when I helped in the kitchen preparation whilst in Ilocos. And it was when I was in Sagada that I got to enjoy a different version of an egg sandwich. Hence the name of this post. Though there really is not much to this quick and easy well-done sunny-side-up with cheese sandwich, it’s the memories and feelings this type of egg sandwich evokes in me that get me every single time! Plus my go-to Herbed Fries (either air-fried, baked, or deep-fried) with my favourite condiments: mustard, Amrey’s Kitchen™ Sambal Oelek, and good ol’ tomato catsup!

 

I’ve touched the tip of the iceberg about my first-ever Sagada trip when I shared my Garlic-Pepper Chicken recipe in celebration of Indigenous Peoples Month. I still find it incredulous to date that I had to be back in the South for studies before I decided to go way up north to visit this place I once considered a hidden gem, which needed air and land travel to get to. Ironic how I never visited the said place when I was nearer to it during my studies in the north (Baguio). Oh, life truly is amazingly wonderful and full of surprises!

 

Now, time for some Katutubo 101.

cheese - keso

dried - tuyo

basil (sweet) - balanoy

fried - pinirito / prito

potatoes - patatas

salt - asin

pepper - paminta

cooking oil - mantika
